Ingredients
- 1/2 cup chopped tomato, seeded
- 1 jalapeno, chopped
- 1/2 cup fresh cilantro, chopped
- 2 garlic cloves, chopped
- 3-4 tablespoons olive oil
- 1-1.5 tablespoons apple cider vinegar
- 2-3 teaspoon lime zest, grated
- 1.5 tablespoons fresh lime juice
- 1/4 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon black pepper
Instructions
Mix the above ingredients in a blender or food processor, process until smooth. We served over fresh greens topped with grilled peppers, fresh tomatoes, cilantro, avocado, olives and tortilla chips.
